After Glow by Blakesville Creamery
It’s goat milk cheese at its finest!
Cheese Maker: What happens when you have an heiress/philanthropist who wants to save a plot of land from becoming a condo? And what happens when that plot of land is a dairy farm and that heiress decides to turn it into a more environmentally friendly goat farm? And what happens when she gets introduced to a master cheese maker? You get Blakesville creamery.
Cheese: After Glow is a washed-rind lactic cheese inspired by the classic French cheese Langres, but reimagined with American ingredients. Like its French inspiration, Langres is a semi-soft cheese with intense flavor produced through traditional washed-rind techniques, but After Glow switches this concept up by using the milk from Blakesville's farmstead goat herd and a very Wisconsin, New Glarus Belgian Red Ale.
Tasting Notes Visually, After Glow is striking with its delicate wrinkled rind developed through the beer washing process and natural aging. Ready for a buttery, grassy, funky cheese experience? Yes, you are.
Pairing Suggestions: Try it with fruit-forward beers and ciders that complement its cherry ale influence. Wine pairings work with Beaujolais or Zweigelt that won't overpower the cheese. For accompaniments, the cheese is excellent with a crusty baguette. Proof is right around the corner from us!
USE: Eat it right from the clamshell. Kidding, put it on a cheese board, you filthy animal.
