Alpha Tolman by Jasper Hill

This is my dream Alpine cheese. If you have ever had Appenzeller then you have tasted the inspiration for this one.

Alpine cheeses were generally made in larger formats. Imagine heading up into the Alps to graze your cows on the summer fields, but instead of trying to bring milk back down, you decide to make the cheese up there. Also, imagine that each cheese is taxed per piece, so you will naturally make a giant wheel of cheese to be brought back down the mountain.

Alpha Tolman is the perfect example of Alpine cheese with it’s buttery quality and meaty taste.

Pair with: Riesling, Chardonnay, or Pinot Noir. I personally love this one with Parch Spicy Pinarita.

Make into: Try this one as a raclette. Melt over fingerling potatoes, cornichons, and charcuterie.
