Cheese Maker: We have featured this cheese maker before, so you might already be familiar with the two Annas. Landmark Creamery was founded in August 2013 by two Annas—Anna Landmark and Anna Thomas Bates—who met at a potluck for Green County Women in Sustainable Agriculture and discovered their shared passion for artisan cheesemaking over homemade Old Fashioneds.

Cheese: Anabasque is Landmark Creamery's flagship cheese, a washed-rind sheep milk cheese inspired by the traditional mountain cheeses of the Basque region of Spain, specifically modeled after the centuries-old Ossau-Iraty style. Don’t let that scare you! It’s a very approachable.

Tasting Notes  Anabasque presents as smooth and fruity with a bit of funk, offering notes of toasted nuts, fruits, and olives. We love the saltiness of this cheese.

Pairing Suggestions: Because of that saltiness, you can pair this with sweeter things like jams and chocolate. The cheese pairs great with both fruity reds and hard ciders.

USE: Anabasque can substitute for Ossau-Iraty in recipes such as soup. We promise it will be soup season soon! The cheese will melt beautifully, but it is also great on a cheese board. Just look at that rind and paste!
