And just when you thought it was going to be all cow’s milk cheeses, we threw in a sheep’s milk!

This cheese falls somewhere between gouda and comte but is made in the alpine style giving it a fun texture and crunch of tyrosine crystals. It’s crisp and rich. One of my favorites.

Pair with: White wines that have a pop of crispness.

Make into: Anything you want a pop of flavor
