Goat Cheddar by Cypress Grove
Mary Keehn started Cypress Grove in 1983 with just four goats in Humboldt County, California. Her neighbor told her that if she could catch one of their goats, she could keep it. Not only did she catch a goat, but she also caught two, and the rest is history.
Made from pure goat's milk, it's tangy and bright with that characteristic goaty zing, but aged to develop a firm, crystalline texture that snaps when you break it. Think white cheddar meets chevre—nutty, grassy, with a clean finish that keeps you coming back.
Pair it with: Fig jam, toasted almonds, or shaved over a fresh arugula salad. Loves a crisp Sauvignon Blanc or hoppy IPA.
