Moses Sleeper is their love letter to French bloomy rinds—silky, cloud-like paste wrapped in a delicate white rind that smells faintly of mushrooms and butter. When perfectly ripe, it borders on indecent: rich, creamy, with flavors of cultured cream, cauliflower, and a whisper of truffle.

Pair it with: Fresh baguette and nothing else (really). If you must, add champagne grapes or a drizzle of hot honey. Sparkling wine or Chardonnay.
