Cheese: This cheese marks the revival of traditional raw-milk blue cheese production. Made from unpasteurized cow's milk (unlike its cousin Stilton, which must be pasteurized by law), 

Tasting Notes: Stichelton is aged for 12-16 weeks. It offers a creamy, complex flavor with bright blue veining, notes of cream, mushrooms, and a long, savory finish with less sharpness than traditional Stilton.
