Cheese Maker: Founded in 1922 when John O. Widmer, a Swiss immigrant, purchased the former Riverside Cheese Factory in Theresa, Wisconsin, the company has remained a family-owned operation for four generations, recently earning recognition through its listing in the National Register of Historic Places in August 2025.

Cheese: Brick cheese was invented in 1877 using actual bricks to press the cheese into its characteristic rectangular shape.

Tasting Notes: Young brick cheese offers a mild and buttery sweet flavor profile, making it exceptionally approachable and versatile.

Pairing Suggestions: You can go a little crazy with this cheese, as it might be the perfect vehicle for whatever you want to put in your mouth. Let us know what you try it with. Honestly, we have only ever melted it on things.
