Don't Knock Gas Station Pizza Until You've Tried This

There are many things I miss about the Midwest, and gas station breakfast pizza is one of them. Stop judging me. It’s good! And when you taste it you will feel the same.
Casey’s Gas Station dots the Midwest landscape. We didn’t have them in Kansas until I was an adult, so I didn’t grow up with Casey’s taco pizza or breakfast pizza, but once I moved to Iowa in 2005, my life changed for the better.
If you have had these two pizzas, you know the joy of gas station pizza. We learned how to make them after moving to Arizona because the heart wants what the belly wants.
Here’s a recipe that we came up with to help scratch that breakfast pizza itch.
Breakfast Pizza
Pizza is not just for dinner anymore!

Ingredients
1 Trader Joe's pizza crust
Measure with your heart - queso (pizza sauce base)
4 ounces Brick Cheese, cubed (let’s be honest you can measure this with your heart too)
4 ounces Raw Mild Cheddar by Jason Wiebe, shredded
4 strips bacon - more if no one is looking
We forgot to measure so do your best - cooked sausage, crumbled
5 large eggs
Steps
Preheat oven: Preheat your oven according to the Trader Joe's pizza crust package directions.
Pre-bake the crust: Roll out your crust and place on a baking sheet or pizza stone and bake for about 5 minutes, until just set but not yet golden. This gives you a sturdy base that won't go soggy under all the good stuff.
Cook the bacon: While the crust pre-bakes, cook 4 bacon strips in a skillet over medium heat until crispy. Drain on paper towels, then roughly chop or crumble.
Soft scramble the eggs: Whisk 5 large eggs and cook in a lightly buttered skillet over medium-low heat, stirring gently. Pull them off the heat when they're about 80% done — still a little glossy and soft. They'll finish cooking in the oven.
Build the pizza: Spread a layer of queso (pizza sauce base) evenly over the pre-baked crust all the way to the edges. Scatter the 4 ounces Brick Cheese, cubed cubes across the top, then layer on the 4 ounces Raw Mild Cheddar by Jason Wiebe, shredded. Add the crumbled bacon and cooked sausage, and finally the soft scrambled eggs.
Bake: Return the pizza to the oven and bake for 10 more minutes, until the cheese is melted and bubbly and the eggs are just set.
Slice and serve: Let the pizza rest before slicing. Serve hot.
